Apple Pie Bites

As we start to settle into fall weather, apple season is just getting under way. These apple pie bites are a delicious, beautiful way to enjoy some fall flavors. You can even personalize them with your favorite kind of apple!

Prep Time: 30 minutes
Cook Time: 15 minutes
Yield: 24 bites

Filling:
2 cups apples, chopped and peeled
2 tbsp lemon juice
1 tbsp sugar
1/4 tsp pumpkin pie spice

Crust:
1 stick of cold butter, cubed
1/2 cup flour
1/2 cup rolled oats
1/3 cup brown sugar
1/4 tsp pumpkin pie spice
2 tbsp finely chopped pecans

Topping:
2 tbsp finely chopped pecans
1/4 cup (or more, as needed) rolled oats

 

Preheat the oven to 350°F. 

Add the chopped, peeled apples to a medium saucepan with the lemon juice, 1 tbsp of sugar and pumpkin pie spice. Bring mixture to a boil and then reduce heat to a simmer, allowing the mix to simmer until the apples are tender (somewhere between 5 and 10 minutes). Once apples are tender, remove pan from heat and set aside.

Use a food processor to combine the flour, half of the oats (1/4 cup), brown sugar, and pumpkin pie spice. Add the butter and mix in the food processor until the mixture begins to look like crumbs. Remove from food processor and stir in the the chopped pecans and the rest of the oats (1/4 cup).

Using a one ounce scoop or a small spoon, place a small amount of crust mixture into each mini muffin tin. Press the mixture into the bottoms and around the sides of each cup, making sure to cover the entire bottom and as much of the sides as you can.

Place a small scoop of the apple mixture into each muffin cup. Sprinkle with the finely chopped pecans and rolled oats. Bake for 15-20 minutes or until the bites look golden brown. Cool for at least 10 minutes before you remove them from the muffin tin.

These taste great served with a little dollop of warm whipped cream on top and a nice hot cup of tea on the side!
